Has anybody faced this weird problem before. Every time I make idly it has patches of orangish brown spots all over. I am really surprised and I am not sure why it happens. How many minutes should idly be cooked and the ideal heat at which it is to be done. If somebody could help me out with this it would really be great |

Dear Swarna,
I have had this problem. I found out that if I use the Uncle Ben's rice for idlies and make the dough too thick, the dough has a yellowish layer on the top and the idlies have orange spots when cooked. To solve the problem, use less Uncle Ben's rice in the idli mixture (in other words use more long grain rice) or substitute it with idli rice.
Another reason for the yellow layer is the dough is too thick. Try making the batter little watery. Once you mix the salt, if you drop the dough from your hand, it should fall freely. (the dough will thicken as it ferments).
Try these tips and let me know if it helped.

Sorry I missed the second part of your email. Idlies have to be steamed so the cooking temperature is around (100 degree centigrade)the boiling point of the water. If you are steaming idlies on stove top, it takes about 15 minutes in the electric stove and about 10 minutes in the gas stove. If you use Idleez multipurpose steamer, it will take 20 minutes to cook the idlies but it will shut off automatically. Since the idli plates are coated with non-stick material, the idlies will come off easily. If you are using regular stainless steel plates, spray pam or oil and then pour the batter.

I too had this problem when i did not mix the baking powded properly before adding it into the idly batter. Always use little water to dissolve the baking powder completly and then add this mixture to the batter and mix throroughly!

Hi swarna,
y ru wasting ur time in preparing idlies, and facing problems--jus hop across the road and order idly from a restaurant- saves time and botheration
if idly doesnt come ok, prepare upma, if upma doesnt come ok, prep dosai, if nothing comes ok-- eat bread, butter and jam.. after all god made us not live to eat, but eat to live.. any more advise needed i am available
