HI,
This is gaya3 here again. WE have browsed many sites but did n't get one. And many refused to tell the secret.I have eaten chilli chicken in bangalorein andhra restaurant.
The chickens r boiled and not the fried ones, and it is almost green in color with green chillies sticking. And, it has aroma both of lemon and green chillies and it has little gravy.
Please do help me???
Thanx,
Take care

Hi All,
I think nobody knows the correct recipe for the elegant 'Andra Style Chilli Chicken' as prepared by Andra Style restaurants. It's my favorite dish and don't know when I'll get to eat it again. I am pretty sure, the chiken is boiled, and cooked with a lot of green chilles and lemon. Somebody should know the recipe!!

Someone
The foaming is cause by the oil being too old or too hot.
Reduce the heat. If oil starts foaming again, then change the oil.
Also the ginger and garlic shld get rid of the smell.

the chilli chicken everyone is asking about gets its unique flavor from aginomoto-mon sodium glutamate. generally regarded as not safe, but people still use it. try adding a pinch to the recipe u know and ull see the differance.

Hi Gaya3! I have tried this Andhra pepper chicken recipe from the NDTV site, which satisfies the criteria of boiled, green chillies, lemony, and moist. Try it and see if this fits the bill...
Kodi Mirium Veepudu (Andhra Pepper Chicken)
Ingredients:
500 gm chicken drumsticks
10 gm turmeric
50 gm ginger garlic paste
100 gm green chilli paste
salt to taste
50 ml lemon juice
100 ml oil
05 gm cumin seeds
02 gm curry leaves
100 gm onions
50 gm coriander powder
50 gm crushed pepper
50 gm coriander leaves

Kodi Mirium Veepudu (Andhra Pepper Chicken) contd...
Method:
Chop the onions and the coriander leaves. Marinate the chicken drumsticks with turmeric, ginger garlic paste, green chilli paste, salt and lemon juice.
In a kadai heat oil and add cumin seeds. After they crackle, add the chopped onions and Sauté till they turn golden.
Add curry leaves, coriander powder and crushed pepper. Sauté for 2 more minutes and add the marinated chicken.
Sear on high flame, then reduce heat and cook for a further 15 minutes stirring occasionally.
Sprinkle chopped coriander leaves and cook for 2 minutes. Before serving garnish with more crushed pepper and coriander leaves.
I have tried this with boneless and with cut whole chicken. My family LOVES this preparation! Only thing is adjust the qty of chilles and pepper as per your taste, else will be TOO spicy.
